oven baked crumbed chicken

Our oven baked crumbed chicken has a crispy crunchy coating with a tender juicy chicken thigh inside. Nobody will ever believe that this is baked and not fried!


Ingredients

1 kg chicken thighs

3 eggs room temp

2 tbsp sweet chilli sauce

salt and pepper

1 tsp garlic crushed

2 tbsp Australian Superfoods NQ chia seeds

2 tbsp romano cheese grated

panko bread crumbs

2 tbsp olive oil


Method

Combine sweet chilli sauce, garlic, eggs, cheese, oil and chia into a bowl.


Salt and pepper to taste, mix well.


Add chicken thighs and cover.


Leave to marinate in the fridge for at least 2 hrs.

Mix bread crumbs with salt and pepper.


Coat marinated chicken with bread crumb mix.


Lay chicken pieces on tray with baking paper.


Bake for 1 hour on 180 degrees turning half way through cooking.
