About the Recipe
Soft, chewy and full of chocolatey goodness, these easy chia cookies are a simple way to add Australian-grown chia to a family favorite. Perfect for lunchboxes, afternoon tea or a homemade treat.

INGREDIENTS
125g butter, softened
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
1 cup plain flour
2 tbsp Australian Superfoods NQ chia seeds
1/2 tsp bi-carb soda
1/2 cup chocolate chips
METHOD
Step 1
Cream the softened butter and brown sugar until smooth. Add the egg and vanilla and mix until combined.
Step 2
Add the flour, chia seeds and bi-carb soda. Mix until a soft cookie dough forms, then fold through the chocolate chips.
Step 3
Roll the mixture into 12 balls and place on a lined baking tray. Gently flatten each one.
Step 4
Bake at 180* C for 10-12 mins, or until lightly golden around the edges. Allow to cool before enjoying.
