About the Recipe
Moist, naturally sweet and full of wholesome goodness, this easy chia banana bread is a simple way to add Australian-grown chia to a family favorite. Perfect for breakfast, lunchboxes or afternoon tea.

INGREDIENTS
3 ripe bananas, mashed
2 eggs
1/3 cup melted butter or coconut oil
1/4 cup monkfruit sweetener or maple syrup
1 tsp vanilla extract
1 1/2 cups self raising flour
3 tbsp Australian Superfoods NQ chia seeds
1/2 tsp cinnamon
1/4 cup milk of choice
METHOD
Step 1
Preheat oven to 180*C. Grease and line a loaf tin with baking paper.
Step 2
In a large bowl, mash the bananas, then whisk in the eggs, melted butter, monkfruit sweetener or maple syrup and vanilla extract.
Step 3
Add the flour, chia seeds, cinnamon and milk. Stir gently until just combined. Don't overmix.
Step 4
Pour the mixture into the prepared loaf tin and bake at 180*C for 40-45 minutes, or until golden and skewer inserted into the centre comes out clean. Allow to cool before slicing.
